Reply from Jenny, Age 22 - 01/16/06 - IP#: 69.110.32.xxx Vegan Chocolate Chip Cookies: 2 1/4 cup flour pinch of baking soda pinch of salt 1 cup (2 sticks) non-hydrogenated vegan margarine or vegetable shortening 1 1/2 cup packed light vegan brown sugar 3 tablespoon vanilla extract 1 tablespoon imitation butter flavor 1 1/2 tablespoon Ener-G mixed with 2 tablespoon tepid water 1 1/2 packages (12 oz. each) semisweet chocolate chips* 1/2 cup chopped walnuts or pecans Directions: Combine flour, salt, and soda in small bowl; set aside. In a large mixing bowl, cream margarine, vegan sugar, flavorings, and egg substitute in order listed, mixing well. Add flour mixture and combine thoroughly. Add chips and nuts; mix well. Drop by teaspoon onto ungreased non-stick baking sheet and bake in preheated 375 degree oven for about 6 minutes. Cool on wire rack. Makes about 100 dainty cookies. *Note: check ingredients carefully; Baker's brand is, but Nestles is not, for instance. I got this recipe from vegweb if you're interested in any more vegan recipes.
